2 questions – what about for lighter riders – 55 to 60kg? Would this board still be suitable? Also, is the fin box only compatible with Shark branded fins or can you use some of the standard fins out there as alternatives?

This board would still be suitable for lighter riders, yes. You may have to work a bit harder when paddling in chop or wind to turn, but in calm conditions this board would be great.
You can use US fin box compatible fins in the Shark SUP foldable fin boxes. Watch this video we did a while back https://www.youtube.com/watch?v=2z4n5O3-0lc.
